With all the warnings such as warranty, no future downloads, and digital content, why would people ever proceed with doing this? I guess I have no clue as to the benefits of this process so it's off to Google I go.

I used custom ROMs in the past that were faster, had stability, customizations that made it worth while.
I live in Canada and many manufacturers just do not care about Canadians and with some devices I found if I wanted the latest OS the only thing I could do it load a custom ROM.
Asus they do try got ICS months before anybody else even the Motorola Xoom remember Canada is overlooked they are running 3.2 in Canada.
With an unlocked bootloader, NVFLASH can be used to flash custom recovery / ROMs.
PITA developing ROMs without NVFLASH I would imagine, and afaik there was no way to flash CWM until now
